Participants learned how to make fresh summer pickles during a Quick Pickling Workshop held on the evening of Tuesday, July 21, at the Dover Town Library. The participants learned how to make “quickles” or quick pickles.

During the hands-on workshop, participants learned the basics of quick pickling while creating their own pint jar of pickles using seasonal vegetables such as cucumbers, zucchini and summer squash. After slicing the vegetables, participants packed them into jars with herbs and spices before preparing a hot vinegar brine to pour over the vegetables. The result was a batch of quick pickles, also known as refrigerator pickles.

Unlike traditional canned pickles, quick pickles are stored in the refrigerator and can be enjoyed after one to two days. Each participant took home a jar of the pickles they made while learning a simple method for preserving fresh summer produce. The program was held in the library’s Community Room.
